Profile	In 2009, he founded the vegan restaurant “AIN SOPH.” in Ginza, Tokyo. Based on the concept of “returning to your true self,” the restaurant offers an experience that fulfills you from the inside out through 100% plant-based meals and a comfortable space. It currently has five locations nationwide, and is also promoting the manufacturing, wholesale, and licensing of vegan foods.
